Look at the kali EFI64 menu in the linux.grub2 file and make a new .grub2 file with just that entry.
Test it.
Then look at the \isolinux\install.cfg file inside the ISO file and use that to modify the new .grub2 menu - adapt the menu to use the install lines
#graphical install
linux /install/gtk/vmlinuz video=vesa:ywrap,mtrr vga=788 -- quiet
initrd /install/gtk/initrd.gz
However, Kali may not support UEFI installation??
